I should have bought that boat, the Stoker:) At any rate, time will tell if my 'no wood' Allison will last. There is wood behind the dashboard.

The next one I plan on trying Plascore Honeycomb . Seems like a value product that like any rebuild needs proper prep and time when laying out , bonding and glassing in.Forming it to contour without voids is key to the strenght. Transoms, high quality marine ply built over what is needed has worked for me. That and I can see no reason not to use the product under the water line, not just sides. If you do the job right , it will last . Any halfway done job that gets wet from owner neglect will not last.
